There is something so absolutely comforting about a big slice of warm apple pie with a big scoop of vanilla ice cream, am I wrong?
Delicious tart apples, baked in a gooey sauce, and that crisp flaky crust to hold it all together. This is a pie I remember (and still have) having at Thanksgiving and if it’s not too hot sometimes for the 4th of July.

1/4 cup water
Directions
- Pie Crust
- Preheat oven to 350o degrees Fahrenheit.
- In a bowl cut cold butter into the flour and salt, till it looks like bread crumbs.
- In a separate bowl whisk together egg, water and vinegar; pour into flour mixture.
- Blend with a spoon until moistened. divide dough into two parts.
- Roll first dough part out to fit into a 9 inch pie pan and place in pan. Save the other half for later.
- Place parchment paper on top of crust and fill with pie weights (You will need to packages to properly weight crust down).
- Begin baking crust for 15 minutes. Then remove pie weights and bake for another 6-7 minutes until just brown.
- Pie Filling
- Preheat oven to 350o Fahrenheit.
- Peel and thinly slice apples, set them aside.
- In a pan over medium heat melt butter, adding flour until a paste forms. allow this to cook for 2-3 minutes. add water and sugar to pan bringing to a boil. Lower temperature to low and allow to cook for 3-5 minutes until a syrup is formed.
- Mound apples into your prebaked pie crust and pour syrup over the apples.
- Roll out your second half of dough and cut into 1 inch strips (a pizza cutter or pastry wheel work best for this). Then begin to weave your lattice over your apples. Making sure to pinch the sides to the base crust.
- Once lattice is done I like to brush the tops with a beaten egg and sprinkle a little cinnamon sugar.
- Bake for 45 minutes until apples are soft.
- Enjoy warm with some whipped cream or vanilla ice cream!
Notes
- You can use one type of apples but I find mixing the sweet crisp Gala apples with the Tart Granny Smith is a wonderful combination.
