Baking is one of my favorite parts of the holiday season. I bake throughout the year but there is truly something magical and special baking this time of the year. It could be the fact that your kitchen and home don’t heat to boil with the oven on. Or it could be the ability to share all of the treats with your loved ones. What ever the case, ’tis the season for baking and I couldn’t be more excited.
As much as I love baking all of the treats. It can get hard to navigate with two little ones under foot. Because of this I’ve started making cookie bars. They use one pan, they can be cute and they don’t require lots of trips in and out of the oven. They are easy and delicious. It’s a win win situation.

Christmas Sugar Cookie Bars

- Cookie Bars
1/2 cup butter, melted
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/4 cup sprinkles
- Frosting
2 cups powdered sugar
1/2 cup butter, melted
3 tablespoons cream cheese
1 teaspoon vanilla
2 tablespoons milk
Sprinkles to decorate
Directions
- Preheat oven to 350oF. Grease a 9×9 inch pan or line with parchment paper.
- Beat together butter and sugar until fluffy, add eggs and vanilla. Beat in flour and baking powder a little at a time until it forms a thick batter. Then mix in sprinkles.
- Spread batter into prepared pan and bake for 20 minutes or until golden. Allow to cool completely before decorating.
- For the frosting; combine all ingredients except the sprinkles into a mixer and beat together. Spread frosting generously to the tops of the cookie bars and add sprinkles. Eat immediately or allow frosting to harden slightly for a firmer feel.
